20 grape tomatos
10 oz. mozzarella cheese, cubed (I like to use the mozerella balls if you can find them)
2 tbsp extra virgin olive oil
2 tbsp fresh basil leaves, chopped
pinch salt
pinch grounblack pepper
20 toothpicks

Directions:
Directions:
Toss tomatos, mozerella cheese, olive oil, basil, salt and pepper together in a bowl until well coated
Skewer one tomato and one piece of cheese on each toothpick.
Arrange on platter with extra whole basil leaves.

This is the decorative way to have this kind of appetizer or salad. Most often i just buy pre-sliced mozerella cheese.
I use fresh whole tomatoes- sliced and layer them on a platter. I drizzle balsamic vinegar over the top plus coarsely ground pepper and salt. I chop basil leaves and top the tomatoes and cheese or just use whole basil leaves. Either way it is easy and delicious!
