4 cups cold water
¼ tsp salt
1 cup uncooked long-grained white rice
3 cups milk
½ cup raisins, optional
⅛ tsp ground cinnamon, optional
1½ tsp pure vanilla extract

Heavy cream for serving

Directions:
Bring the water to a boil in a heavy saucepan. Add the salt and stir in the rice with fork. Cover and simmer over the lowest possible heat, stirring now and then until rice is very tender, about 35 minutes. Add the milk, raisins, sugar, and cinnamon and simmer, uncovered, stirring frequently, until most of the milk is absorbed, usually about 20 minutes.

Remove from the heat. Stir in the vanilla. Serve with or without cream.
