"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

4 eggs
1 c. milk
1 c. flour
Powdered sugar
Lemon wedges (optional)

Directions:
Place butter in 3-4 quart round or oval shallow baking dish. Set in a 425º oven. Meanwhile, in a blender whirl eggs, gradually pour in milk then slowly add flour, continue to whirl for 30 more seconds. (I do this all in a bowl). When butter is melted, remove pan from oven and quickly pour in batter. Return pan to oven and bake 20-25 minutes. Cut into wedges and serve immediately. Can use powdered sugar and lemon wedges if you'd like. We like fruit jams, syrup and honey.
