4 C milk
4 egg yolks
2 T cornstarch (mix w/ sugar)
1 T vanilla
1 C sugar
1/2 - 1 t salt

Directions:
Directions:
Heat milk, add sugar and cornstarch mixture. Stir constantly until it comes to a boil. Whip egg yolks. Quickly whisk egg yolks into a little of the hot mixture off of the stove. Then whisk egg yolks into the rest of the mixture and take off the stove. Add vanilla last. Cool off.

(The key here is to blend the egg yolks into the milk mixture without cooking the eggs before they are blended, otherwise you have scrambled eggs).

Once cooled, but before the cream is set, add banana or coconut. Pour into crust and chill. Serve with whipped cream.
