About 2 T. butter
2 eggs
1 c. milk
1 c. flour
1/4 tsp. salt
Extra butter, jam, or syrup

Directions:
Preheat oven to 375º. Melt butter. Brush the insides of 12 muffin cups with the melted butter. Break eggs into mixing bowl, add milk and beat well. Add flour and salt and whisk until blended. It doesn't have to be perfect. Pour about 1/4 cup of batter into each muffin cup. Bake 30 minutes without opening the oven. Remove from the muffin tins and prick with a fork to let the steam escape. Spread with butter or jam and eat.

Matthew's Great Grandma Nicholson introduced him to popovers at a restaurant named Nora's. For a three year old the popovers there were double-fisted. Whenever, Grandma let Matthew pick where to eat...he always requested the "Popover Place."
