1 large onion, chopped
1/2 lb. mushrooms, sliced
Butter for sauteing
Salt and ground black pepper to taste
1 lb. lean ground beef
1 (10 oz.) package frozen chopped spinach, thawed
1/2 (10 1/2 oz.) can condensed cream of mushroom soup
4 oz. sour cream (can use reduced-fat)
1 1/2 tbsp. dried oregano
8 oz. shredded mozzarella cheese

Saute onion and mushrooms in butter. Season with salt and pepper. Remove from pan and set aside. Brown meat and drain excess fat. Stir in spinach, soup, and sour cream. Add oregano and blend well.
In an 8x8x2 inch glass baking dish, layer meat mix, onion-mushroom mixture, and cheese. Bake at 350 for 20 min. Let rest a few minutes before serving.
