2 c. all-purpose gluten free flour blend
½ tsp. xanthan gum (omit if your flour blend has xanthan or guar gum)
1 tsp. baking soda
1 tsp. salt
2 oz. cream cheese (room temperature)
¾ c. unsalted butter, melted
1 c. packed brown sugar
½ c. sugar or sugar substitute
1½ tsp. vanilla extract
2 egg yolks (room temperature)
2 c. semi sweet choc chips or substitute 1 c. white chocolate chips for 1 c. choc chips

Preheat oven to 375º F. In a medium bowl, whisk together flour, xanthan, baking soda, and salt. Set aside. In the bowl of your stand mixer, place the cream cheese, then pour the melted butter over it. Add brown sugar, and sugar and mix on medium speed for 2 minutes. Add vanilla and egg yolks. Mix on low medium speed until well mixed. Add flour mixture, beating on low until just combined. Add the chocolate chips and mix on low until just mixed thoroughly. Line cookie sheets with parchment paper or silicone liners. Do not spray. Scoop even mounds of cooking dough and space several inches apart on the cookie sheet. Bake the cookies for 11-12 mins.. Remove when edges are set and just browning. They can look underdone, but they will continue cooking until cooled. Let the cookies set for 2-3 mins. before removing to a cooling rack to finish cooking.

You can freeze the cookie dough for later baking. I like to bake up a dozen and form the rest in balls for the freezer. This makes 3-4 dozen.
