2 Tbsp. of margarine
1 c. chopped onions
2 bay leafs
1/4 c. all purpose flour
1 1/2 c. low fat milk
1c. whipping cream
4- 10 1/2 oz of low sodium chicken broth
2 lbs of peeled cubed potatoes
1 tsp. salt
2 tsp. dried oregano
1/2 tsp. ground pepper

Melt margarine in large Dutch oven over medium heat: add onions and bay leafs. Cook 5 minutes or until tender, stirring occasionally.
Stir flour and gradually add milk and broth... Bring to a boil, stirring constantly.
Add potatoes and next 3 ingredients. Reduce heat to low and simmer, uncovered for 18 min. or until potatoes are tender
Discard bay leafs.
Using a slotted spoon, place 2 1/2 c. of potato mixture in a electric blender, cover and process until smooth.
Add puree back to potato mixture in Dutch oven: stir well. Serve
