4 cups of 2% milk (1L)
½ cup of short grain rice (risotto rice, Arborio)
½ cup of sugar (I use ¼ usually)
1 TBSP of butter
Sprinkle cinnamon or nutmeg
Optional - raisins


Directions:
Directions:
Preheat oven to 350º. Mix sugar, rice and cinnamon in a casserole dish, then mix in the milk. Put a dollop of butter in the center. Cook for 45 min with the lid on, checking & mixing it once to make sure it doesn’t boil over. At 45 min, stir, remove lid and cook for another 45 min, stirring once or twice. Total cooking time is 1.5 hrs. Once you cook it a few times you'll know the consistency you want to take it out at, it will thicken while it cools.
