Ingredients: 1 C plus a little more shortening 1 C plus a little more sugar 4 - 5 T yeast Appx 8 C bread flour A few sprinkles nutmeg 1 qt milk, scalded 2 T salt 2 or 3 room temp eggs, beaten 1 T vanilla (raisins, nuts optional) Cinnamon Brown Sugar Melted butter

Directions:Dissolve yeast in a little warm water, set aside to dissolve and grown. Scald Milk; add shortening, sugar and salt. Let cool before adding yeast or it will kill the yeast. Add yeast, eggs, vanilla and nutmeg. I add a little flour before I add the yeast cultures. Add the raisins just before you start adding the rest of the flour. Add enough flour to pour into a "well" of flour and knead until it becomes a nice SOFT dough. Put into a big greased bowl and let it raise once until it doubles in size. Punch down, let it raise once more. Then roll out to about 1/4" thick. Spread melted butter on dough, sprinkle brown sugar and cinnamon on dough all the way to the edges. Starting at the long end, roll up and pinch ends and edge to roll. Pat melted butter on roll to make it brown when it cooks. Cut into 1" rolls. Place on greased baking sheet. Let rise to about double and bake 375º for approximately 15 minutes or light golden brown on top. You can also make orange rolls with this recipe Just spread with butter, white sugar and orange juice and a little orange zest, then roll up and glaze with o.j. as the liquid with the glaze. |
