1 C milk
1 T lemon juice
1 t vanilla
1.5 C brown sugar
2/3 C oil
1 egg
2.5 C flour
1 t salt
1 t baking soda
1.5 C rhubarb, chopped
1/2 C chopped walnuts
1/4 C brown sugar
1/2 t cinnamon
1 T butter, melted

Directions:
Directions:
Preheat oven to 325 degrees. Grease two loaf pans.

In small bowl, mix milk, lemon juice and vanilla. Let stand 10 minutes.

In large bowl, mix 1.5 C brown sugar, oil and egg. Combine flour, salt and baking soda. Stir into sugar mix alternately with milk mixture. Fold in rhubarb and nuts. Pour batter in pans.

In a small bowl, mix 1/4 C brown sugar, cinnamon and butter. Sprinkle this over loaves.

Bake 40 minutes.
