5 large potatoes, unpeeled. 1 large onion, 2 eggs, 1 1/2 tsp. salt, 3-4 T. all purpose flour, 1/2 tsp. baking powder, 1/4 c. cilk, cooking oil, applesauce (optional)

Cut potatoes and onion and mix in blender until combined. Pour off any excess liquid. In large mixing bowl, combine eggs, salt, flour, baking powder. Stir in potato mixture and milk.. Add extra flour if mixture becomes thin or runny. Heat about 1" of oil in skillet on medium-high heat. Spoon batter into hot oil by tablespoonful. Brown, then flip pancakes. Serve with applesause, if desired.
