Make cornbread if you are using a package mix or:
1 C corn meal
1/2 C flour
1/2 tsp. salt
2 tsps. baking powder
1 C milk or buttermilk
1 egg , beaten
3 Tbls. oil
Add to this:
1/2 bunch of celery chopped, with leaves
1-2 bunches green onions, chopped

For mixing the dressing I add:
2 Tbls. sage
3 big Tbls. poultry seasoning
1 big Tbl. black pepper
1 stick of butter
more salt if needed

Directions:
Directions:
Mix dry ingredients in a bowl, add milk and egg, stir together. Add cooking oil and mix. Add celery and onions, pour into iron skillet and bake at 450 deg. F for 20 - 25 mins. or until nice and brown.

Take giblets from turkey, place in pan of water, bring to a boil and cook until done. Save juice and cool giblets and cut meat off and save.

Make dressing:
Cool cornbread, break up in large bowl, add 3 - 4 cups stale white bread, cut in cubes or a pkg. of dry bread cubes. Add some of broth from cooking giblets, if you need more use butter (melted) and/or chicken broth. I add poultry seasoning, sage, a lot of black pepper, more salt and 5 -6 eggs. I just taste it and add whatever I think it needs. Stuff turkey with some if you wish and bake the rest for 45mins. in 325 deg. F oven.

Giblet Gravy:
Save some of the broth from cooking the giblets and the meat you cut off the bones from the giblets, and to this add several lg. spoons of uncooked dressing. Simmer for a while and serve warm. Add 2 or 3 hard cooked eggs cut into pieces.
