Wet Ingredients:

1 C. Shortening
1 C. Brown Sugar
1 C. White Sugar
1 tsp. Vanilla Extract
¼ tsp. Maple Extract
2 Eggs

Dry Ingredients:

1¼ C. Flour
1 tsp. Baking Soda
½ tsp. Salt
½ tsp. Cinnamon
¼ tsp. Nutmeg
3 Cups Old Fashioned Oatmeal (Dry--Not Instant!)

May also add raisins to taste.

Cream all wet ingredients together.
Add dry ingredients to mixture, adding the oatmeal as the last ingredient works best.
Add raisins to mix, as desired.
Put dough by spoonfuls onto cookie sheets.
Bake at 350º 10-12 Minutes

This is my favorite Oatmeal Cookie! I generally dislike raisins cooked into anything, but with thisd cookie, they taste amazing!
For a long time, I thought this recipe was from my Grandma Hazel's mother, but I later learned from my mom that it was Grandpa Andy's mother's recipe...a family recipe from Scotland.
