1 cup shortening or butter
2 Tbsp grated orange rind
1½ cup sugar
2 eggs
¾ cup shredded coconut
2 cup flour
2 tsp baking powder
1 cup uncooked oatmeal
¼ tsp salt
4 Tbsp milk

Preheat oven 400 bake 10 - 12 Minutes

Cookie sheet

Cream shortening, orange peel and sugar
Add eggs, 1 at a time, mixing well
Add remaining ingredients

Drop by teaspoon on cookie sheet
Bake 10 - 12 minutes, Don't let them brown !

Cool on sheet a few minutes, then put on rack to cool completely
Can be stored in airtight container

This recipe from 1935 came from my Aunt that lived in the Rio Grande valley of Texas.
It's been a family favorite at Christmas for years.
