4 c. diced apples, peeled
2 c. sugar
1/2 c. salad oil
2 eggs
1 c. chopped nuts
2 tsp. vanilla
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt

Directions:
Directions:
Mix the apples and sugar well. Add oil, eggs, nuts and vanilla. Mix together. Add rest of dry ingredients. Mix by hand and put in ungreased 9x13 pan. Bake 1 hour at 350º.

Very good with creamy confectioner sugar icing, or with whipped topping. Can also be baked in 10 in. tube pan by adding 10 minutes to baking time.
