1/2 c butter
1 c sugar (for topping)
1egg
1 tsp vanilla extract
1 c all purpose flour
1 c oatmeal, uncooked
3/4 tsp cinnamon (for topping)
1 1/2 tsp cinnamon (for filling)
8 large granny smith apples, peeled, cored and sliced
3/4 c sugar (for filling)
1 1/2 Tbsp cornstarch
1/4 tsp nutmeg
vanilla ice cream (optional)

Preheat oven to 350 degrees F.

For Topping: Using an electric mixer on medium speed, beat together the butter and 1 cup of sugar in a large bowl until smooth and creamy. Blend in egg and vanilla. Stir in flour, oats and 3/4 tsp. of cinnamon until thoroughly blended.

For Filling: In a separate bowl, combine the sliced apples, 3/4 cup of sugar, cornstarch, 1 1/2 tsp. of cinnamon and nutmeg. Mix well. Evenly spoon the apple mixture into a 3 quart casserole dish. Spoon topping mixture evenly over apple filling. Bake for 1 hour or until golden brown.
Serve warm by itself or over vanilla ice cream.
