Ingredients: 2 Cups Flour 2 Cups Sugar 1/2 Tsp Baking Powder 2 Tsp Baking Soda 1 Tsp Salt 1/2 Tsp Nutmeg 1 1/2 Tsp Cinnamon
3 Cups Grated Carrots 1 Cup Cooking Oil 4 Eggs 1/2 Cup Rasins
Cream Cheese Frosting 1 250 gm Pkg of Cream Cheese room temperature 1/4 Cup Butter 1 Tsp Vanilla 4 Cups Icing Sugar

Directions:Grease and flour lightly a 13x9x2 pan or two round pans. In a mixer bowl combine the first seven ingredients. Add the next three ingredients beating with an electric mixer until combined. Beat on medium speed for two minutes then fold in rasins to evenly distribute in batter. Bake at 325 degrees F for 50 to 60 minutes in rectangular pan and 40 minutes in round pans. Place on wire racks and let cool before attempting to frost.
In a mixing bowl combine softened cream cheese, with butter and vanilla. Mix until smooth and add in icing sugar in four intervals. This creme cheese frosting is very sweet and you may want to cut down on the icing sugar so taste after each interval. Mix until icing is smooth. Then frost the carrot cakes. |

Notes: This is one of the best carrot cake recipes from scratch. Grampa used this carrot cake recipe to barter with his grand daughter Dani's boyfriend who is a plumber. Now Grampa get his plumbing done for 3 to 5 carrot cakes depending on the size of the job. Dani actually was given this carrot cake and then sold it to her friends because it so good. Gramma said no more selling off my baking goods.
