6 eggs
1 1/2 cup sugar
1 1/4 cup melted shortening (Crisco)
1 tbsp anise seed
1 tbsp vanilla
1/2 orange or lemon rind and juice
4 cups flour

Directions:
Directions:
Beat eggs and sugar until light and fluffy (foamy).
Add melted shortening a little at a time.
Add anise seed, vanilla orange rind and juice.
Gradually add flour to make a very light dough.

Heat pizzelle press and lightly spray.
Drop spoonfuls of dough, press and close.

Follow directions of the pizzelle press.

This was a signature cookie from Aunt Catherine that she brought to most every holiday — especially Christmas and Easter. She always brought them in gift boxes or old candy boxes which we always had to return.
