1 c. butter, softened
½ c. sugar
1 egg
1 tsp. lemon juice
1 Tbsp. lemon zest
1 tsp. vanilla
½ tsp. salt
½ tsp. baking powder
2 c. flour

Glaze:
1½ c. powdered sugar
1 Tbsp. lemon juice
1 Tbsp. milk
¼ tsp. vanilla

Directions:
Preheat oven to 350º. In a large bowl, cream butter and sugar together. Add egg and beat in thoroughly. Add lemon juice, zest, and vanilla and mix until well blended. Add salt, baking powder, and flour until incorporated. Roll cookies into 1" balls and place on a greased cookie sheet. Space about 2" apart from each other. Bake for 8-10 min. until lightly golden on the edge of the cookie.

Lemon Glaze:
Combine glaze ingredients in a medium bowl and whisk until glaze is smooth. Drizzle as much as desired over slightly warm cookies. Let finish cooling completely before eating.
