1 9-inch unbaked pie crust (I use store bought)
2 large eggs
1 tsp vanilla extract
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup all-purpose flour
12 Tbsp softened butter
1 cup chocolate chips
1 cup chopped pecans (optional)
vanilla ice cream (optional)

Directions:
Preheat oven to 325*. Unroll pie crust into pie plate, crimp edges. With a hand or stand mixer, beat the eggs until pale and fluffy (high speed for about 1 minute). Stop the mixer and add the vanilla extract, sugar, brown sugar, and flour. Beat on low speed until incorporated into the eggs. Increase speed of mixer until smooth. Stir in chocolate chips and pecans with spatula. spread batter into pie crust. Bake for 55-60 minutes until pie crust and top of pie are browned and filling looks firm. Cool on wire rack for about 60 minutes, slice and serve.

You can also replace the chocolate chips with either peanut butter or butterscotch chips.
