8oz cream cheese
1C crushed pineapple
1C sugar
18-20 maraschino cherries
1 envelope of Knox gelatin
1C heavy cream, whipped
Directions:
Directions:
Soften gelatin in 1/2 C cold water, in medium saucepan bring pineapple (do not drain) and sugar to a boil then add gelatin mixture and let cool. On a cutting board cut the cream cheese into small pieces. Drain and de-stem, pat dry, halve the cherries and pat dry again then add to the pineapple mixture then add the cream cheese and mix then fold the whipped heavy cream and chill covered in refrigerator till firm. Serve chilled :-)
