1 Cup whole grain rice
1/4 C. finely chopped onion
1/4 C. finely chopped bell pepper

Vegetable oil

sliced tomatoes, cut in small pieces

Juice from 1/2 lemon
sat to taste
warm tap water

For long grain rice the ratio is 2 Cups of water for every Cup of rice.

Directions:
Place long grain rice in a strainer and set it in a bowl slightly larger than the strainer. Run warm tap water to fill and let the rice soak for awhile to loosen the starch. Discard water and repeat until water is clear.

In a skillet or sauce large enough to accommodate 2- to 2 ½ Cups rice, put enough vegetable oil in pan to cover. Saute onion and bell pepper until soft.

Add drained rice and continue, continually stirring until the rice grains do not stick to the plan and it seams "heavy." Using medium heat this should take about 10 minutes.

Add tomato, stir briefly and add about 1 cup of warm water.

While mixture comes to a boil, add salt to taste and lemon juice. Stir to blend in.

When mixture comes to a boil, cover and reduce hear to very low to allow the rice granules to swell and absorb the remaining water.

The amount of water you use depends on the variety of rice you use.
