1 inch scoop (spring loaded is helpful)

1 cup (2 sticks) unsalted butter, softend slightly

5 Tablespoons granulated sugar

2 teaspoons pure vanilla

¼ teaspoon salt

2 cups flour

2 cups finely chopped walnuts

1½ cups confectioners' sugar, for dusting cookies twice

Preheat oven 350º Arrange baking rack in the center of oven

With electric mixer, cream butter and sugar. Beat in vanilla and salt

Gradually add flour to butter mixture. Stir in nuts and mix until fully blended

Divide dough in half and wrap dough in plastic wrap for approximately 45 minutes

Meanwhile, place confectioners' sugar into small bowl

Using 1 inch scoop, roll dough in palms of hands to achieve a well rounded ball.

Place dough balls onto prepared baking sheet, 1½ inches apart

Bake until cookies are just beginning to brown, about 12-14 minutes. The underside should be only light brown. Do not overcook, or cookie falls apart

Cool cookies for 2 minutes and then remove to wire rack to cool completely.

Roll each ball in the confectionery sugar, then repeat. Enjoy!
