1 c Sugar
¾ c Flour
1 tsp Baking Powder
2 tsp Cinnamon
2 tsp Pumpkin Spice
½ tsp Nutmeg
½ tsp Salt
⅔ can Pumpkin
1 c Walnuts, finely chopped
3 Eggs
Powdered Sugar

Directions:

Preheat oven to 375ºF. Grease 15x10x1 inch pan and set aside.

Beat eggs on high speed for five (5) minutes. Gradually beat in one (1) c sugar. Stir in pumpkin. Fold one (1) tsp cinnamon, ½ tsp nutmeg, and ½ tsp salt. Spread mixture into pan and top with walnuts.

Bake at 375ºF for 15 minutes.

Sprinkle powdered sugar on damp towel. Turn out cake. Starting at narrow end, roll the cake and towel together and let cool.

When cool, unroll and spread filling over cake. Roll cake and filling up; chill in refrigerator until ready to slice and serve.
