1/2 c. sundried tomatoes, in oil
1/4 c. mushrooms, sliced
1/4 c. minced sage
2 T. minced garlic
4 strips bacon or pancetta, chopped
2 c. dry white wine
1 c. beef stock
Zest of 1 lemon
4 center cut veal chops
Salt and pepper to taste

Directions:
Directions:
Season chops with salt and pepper; grill or broil until rare.

Brown bacon in pan; then add sage, garlic, sundried tomatoes, mushrooms, salt and pepper. Cook for 1-2 minutes; then add wine and beef stock. Add veal chops to pan and cook until done. Add zest of lemon during the last 5 minutes of cooking and garnish with additional sage.
