1/2 lb. beef tenderloin or top round
1/4 c. green pepper, thinly sliced
1 c. bean sprouts
1/4 c. cooked carrots, sliced
1/4 c. pickled mustard, shredded
1/2 c. onion, chopped
Grated ginger, to taste
2 c. vegetable oil
1/4 tsp. salt
1/4 tsp. sugar
2 T. water

Marinade:
1 T. soy sauce
1 T. corn starch
1/4 tsp. meat tenderizer
2 T. water

Directions:
Directions:
Cut beef into 1/4"x1" strips; marinate for 30 minutes. Heat 2 cups of oil to 160 F. Stir beef strips over high heat for 30-60 seconds; drain. Stir fry onions until soft; then add ginger, pickled mustard, carrots, green pepper and bean sprouts. Stir-fry over high heat for 10-20 seconds. Add salt, sugar and 2 T. water and stir; add beef and mix thoroughly.

Any good cut of meat can be substituted for the beef tenderloin. Pickled mustard frequently comes in a plastic bag in brine. You will want to take it out of the bag and rinse it to get rid of some of the salty taste, then squeeze the water out.
