4 cups flour (or 3 cups all purpose flour and 1 cup white rice flour)
1 pound butter, softened
1 cup sugar

Directions:
Directions:
Preheat oven to 325º.
Beat butter and sugar with mixer until light and fluffy.
Add flour with mixer on slow speed.
Spread into a jellyroll pan.
Prick with fork all over (this is called docking).
Bake for 20 minutes or util the edges ever so slightly turn golden.
DO NOT OVERBAKE.
Cool for 5 minutes.
Slice while still warm.

When I was a little whippersnapper, I shared a bedroom with Nanny Chivas in the Columbia house. I remember once getting in trouble and getting sent to my room. Nanny snuck me a piece of shortbread and brought it to me because she knew that I felt real bad for making my parents angry. Even though I was young, I still think she was the kindest person I've ever known.
