1 Stick of unsalted butter, softened
1 cup coconut sugar
1/2 cup almond butter
1 large egg
1 1/2 cups oat flour
3/4 tsp baking soda
1/2 tsp pink Himalayan salt

Directions:
Directions:
1) Preheat the over to 350 degrees. Line 2 baking sheets with parchment paper.
2) Using a handheld or stand mixer, cream together the butter, sugar, and almond butter until fluffy. Add the egg and mix to combine.
3) In a separate bowl, mix the flour, baking soda, and salt with a spoon. Add the dry ingredients to the wet ingredients to the wet ingredients and mix well.
4)Spoon tablespoon-size balls onto the prepared baking sheets, keeping a little distance between each ball.
5) Bake for 10 min, or until the start to turn golden brown.

Note: the cookies are thin, so keep a close eye on them so they don't burn.
