Ingredients: 2 Cups Flour 1 1/2 tsp Baking Powder 1/2 tsp Salt 2/3 Cup Butter or Margarine 1 Cup Sugar 1 Egg 1 tsp Vanilla
2 oz. Unsweetened Chocolate, melted 1/2 tsp mint flavoring and 3 or 4 drops green food coloring

Directions:Mix the first 7 ingredients together and divide evenly into two bowls. Add the melted chocolate to one bowl and mix well. Add the food coloring and mint flavoring to the other bowl and blend well. Refrigerate for at least 1 hour. Then roll each part out very thinly between 2 sheets of waxed paper. Peel off the top sheets of waxed paper on each part and invert the chocolate layer onto the green colored layer. With a rolling pin or your hands, gently press the layers together. Peel off the top sheet of waxed paper. Starting at one end, gently roll up the dough. Roll should be about 1 1/2 inches in diameter. Wrap in waxed paper and refrigerate or freeze until firm. (I always cut the roll in half to make it easier to warp in waxed paper and store in freezer).
Slice and bake at 375 degrees for 8 - 10 minutes. Cool on wire cookie racks. |
