1 c. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. cooked mashed carrots
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
grated rind of 1 orange
1 c. chopped nuts

ORANGE or LEMON FROSTING:
2 c. powdered sugar
2 T. butter, softened
1/2 c. orange or lemon juice

Directions:
Directions:
Cream shortening and sugar. Add eggs and vanilla and beat well. Fold in cooked, mashed carrots. Add flour, salt, baking powder, orange rind and nuts. Combine well.
Drop from heaping teaspoon onto greased cookie sheet.
Bake at 350º for 10 minutes.
Frost with orange frosting when cooled.

This was a favorite recipe growing up. Kristen liked these cake-like cookies as a child (although I don't know if she remembers it!) and requested that I make them for her birthday treat for her class at Butler Elementary.
