2-4 TBS extra virgin Olive Oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium zucchini’s, chopped
2 red peppers, chopped
12 large eggs
1/2 cup grated parm-regg cheese and a little more for the top
1 tbs whole milk
1/2 tsp fresh thyme
1 tsp fresh basil chiffonade
1 tsp minced parsley
1 tsp sea salt
1 tsp freshly ground pepper

Directions:

Preheat oven to 400. Heat the oil in a heavy 10-12 inch oven proof nonstick skillet. Add the onion, garlic, zucchini and red peppers. Cook until the onion becomes golden in color over med heat.

In a small bowl, whisk with the cheese and the milk, herbs, salt and pepper.

Add the egg mixture to the sautéed vegetables and cook over low heat until the bottom is set and very tiny bubbles form on the top, about 5-7 minutes. Remove skillet from the cooktop.

Place skillet in the oven to finish baking, about 10 minutes or until the top is set. Sprinkle the top with cheese and allow to set at least 5 minutes before serving. (6-8 servings depending on size) Great reheated the next day also!
