Mandarin Salad Recipe

1/2 cup sliced almonds
3 T sugar
1/4 C vegetable oil
2 T vinegar
2 T sugar
Dash pepper
1 tsp. salt
1 T chopped parsley
Dash Tabasco
12 - 18 oz. baby spinach
1 C celery, diced
2 green onions, chopped
11 oz. can mandarin oranges (drained)

Over medium heat - cook almonds and 3 T sugar until light
brown. Cool. Break apart and put in air tight container.
Combine dressing ingredients and chill. Mix salad ingredients,
sprinkle with almonds, and add dressing when ready to serve.
