Nanny's Fish and Chips Recipe

Ingredients: 1 pound white fish, haddock, cod or basa Milk Salt and pepper Vegetable oil for frying 3 cups flour 2 t baking soda Ice water

Directions:Soak fish in milk for an hour to remove the fishy taste. Rinse fish and pat dry with paper towel. Sprinkle fish on both sides with salt and pepper. Heat about 1 inch of oil in large skillet until it sizzles when water is sprinkled in. Whisk together the flour and baking soda in a medium bowl. Add ice water gradually until the consistency of pancake batter. Dip fish into the batter, then carefully place it in the oil. Fry until golden, then flip, about 3 minutes on each side. You may need to adjust the heat, since oil will cool as you place the fish in. Drain on paper towel or newspaper. Serve while warm with tartar or cocktail sauce. |

Notes: A note from Kelly: I remember when Gramps, Paul, Sean, Chris and Matt went fishing out of Tampa and caught a nice-sized grouper. The grouper went from the dock to the kitchen, where Nanny made her mother's recipe above. It was by far the best fish & chips I have ever had in my life, including all the "Chippies" I visited in England and Scotland. Is till make this recipe about 2-3 times per year and when I do, there are clean plates all around.
