12 oz. dark chocolate chips
1/2 cup butter
3 large eggs
1 cup granulated sugar
1/4 cup brown sugar
1 TBSP vanilla extract
1/2 tsp baking powder
1/2 tsp salt
94 grams all purpose flour (3/4 cup)
1/4 cup unsweetened cocoa powder
1/2 cup mini semi-sweet chocolate chips
filling:
1/2 cup butter
1 cup powdered sugar
1/4 tsp salt
1/4 cup caramel sauce

Directions:
Directions:
1. Melt chocolate and butter in heavy saucepan over low heat, stirring constantly until melted and well combined. Remove from heat and set aside.

2. In a stand mixer, beat the eggs, sugars, vanilla, baking powder and salt on high speed for 5 min. until the batter is thick and creamy. (do not beat for less than 5 min). Reduce speed to low and slowly add melted chocolate until well combined.

3. Sift together flour and cocoa powder and stir into egg mixture. Stir in chocolate chips. Cover and chill for 30 min.

4. Use a size 100 scoop to form balls. Bake at 350° on parchment lined baking sheets for 8 min. Allow to cool on pan for a few minutes before removing to a rack to cool completely.

5. To prepare filling: cream butter, add in powdered sugar and salt, then add in caramel. Use scoop size 100 to scoop filling between two brownie cookies.
