2 pounds farmer cheese
2 -8 oz pkgs. cream cheese
4 egg yolks
2 Tbs. sugar
1 tsp vanilla

Batter:
2 cups water
2 tsp salt
8 eggs, beaten
2 cups flour
3 Tbs melted butter

Filling:
1. Allow cheeses to stand until room temperature.
2. Mix together.
3. Add egg yolks, salt, sugar and vanilla. Blend together

Crepes:
1. Add water to salt and eggs, stirring in flour gradually until smooth. Blend in butter. Let batter stand for about 1 hour.
2. Stir batter.
3. Heat 6 inch greased skillet with oil.
4. Pour about 1 1/2 tablespoon batter into preheated hot skillet, tipping to cover bottom.
5. Bake on one side only until slightly bubbles. Turn out cooked side up on paper toweling. Continue process until all batter is finished.
6. Place heaping tablespoon cheese filling in center and close both sides of crepe. Continue until all ingredients are used.
7. Just before serving, fry until golden brown in a small amount of butter.

You can also complete cooking and refrigerate or freeze until ready to use and heat when needed at 350 for about 15 min.

These freeze well.

Serve with sour cream or cinnamon and sugar.
