3 Cups Sugar
1 Cup Vegetable Oil
4 Whole Eggs
⅔ Cup Water
2 Cups Pumpkin
1 tsp Cinnamon more or less, :-)
3 ½ Self Rising Flour

Directions:
Directions:
Preheat Oven to 325º.

Mix ingredients together in the order listed, eggs one at at time. Blend until creamy. Pour into greased and floured pan and/or pans. Bake for 1 hour. Optional to add 1/2 cup nuts.

This makes 1 13 x 9" pan or 3 Lg Loaf Pans

I can't recall not having pumpkin bread in our lives. Mom normally makes it with canned pumpkin, sometimes I do, but when pumpkins are in season, I do like to cook them up and freeze them and it makes a huge difference to have the fresh pumpkin in this recipe, but I do add a lot of extra cinnamon, the bread is a lot lighter, but yummy.
