1 lb boneless chicken breasts, diced into 1/2 inch pieces
1 Tbsp coconut oil
2 large clove garlic, crushed
1 tsp grated ginger
1/2 cup diced onion
2 eggs
12 oz bag frozen Green Giant cauliflower medley
2 Tbsp soy sauce

3 Tbsp teriyaki sauce

Directions:
Directions:
1. Heat coconut oil in large skillet and cook garlic, and onion over medium heat for one minute.
2. Add chicken and cook over medium- high heat for about 3-5 minutes, flipping so all sides cook evenly.
3. Add bag of frozen cauliflower mixture and cook for 5 minutes, stirring frequently ( I added 2 bags) or until mixture is tender- crisp.
4. Push mixture to the side of the pan and thoroughly scramble the two eggs, then mix them with the rest of the vegetable mix, Add soy and teriyaki,
5. Cook one more minute and serve!
