2 1/2 pounds ground beef
1 cup Oats
*2 fresh big green chilies (or canned chopped green chilies)
1/2 cup milk
1/2 cup chopped onion
**2 eggs
2 teaspoon salt
2 teaspoon chili powder (I used Penzy HOT)


* Using fresh chilies will have a drier meatloaf so add just a little more milk.

** Can substitute Southwestern or any style egg beaters using 1/2 cup for the two eggs.

Preheat oven to 350 and spray 2 loaf pans with non-stick spray.

In a large bowl combine all ingredients and mix well using hands. Separate mixture into 2 loaf pans and bake for 1 - 1 1/2 hours.

I top with chopped chilies and shredded cheese the last 15-20 minutes. Goes great with Garlic Mashed Potatoes and Butter Beans or Green Beans.

You could also top with a brown gravy or tomato paste topping. I haven’t tried salsa on top yet but think it would work well. You can freeze the second loaf for an easy meal later.
