Filling: 2 1/2 Cups crushed pineapple (1 large can in its own syrup)
1 1/4 cups sugar
21/2 tablespoons corn starch
21/2 Tablespoons butter

Cook over medium heat, stirring constantly until thick and clear then cool.

Pastry: 1 lb Lard
6 cups flour
1 tablespoon sugar
1 tsp. salt
3 eggs unbeaten
1 cake yeast (dissolved in 1/2 cup warm water, set 5 minutes

Cream the lard, add the rest of ingredients slowly. Mix well, then knead until smooth. Chill for 2 1/2 hours or overnight.

Roll dough out on sugar until 1/8 inch thick. Cut with a tea cup about 31/2 in in diameter. Then put 1 tsp of the cooled pineapple filling in the center. Fold over dough so edges meet and fork edges all the way across the edge. (try to keep fork dry, much easier)

Cook at 350 degrees for 15 minutes or until edges get slightly brown.

These are another Christmas Time family favorite. Everyone loves them. I have tried using shortening instead of Lard but, I am not a fan!!
