Juice of Three lemons
3 Eggs
2 T. Butter
Zest of 2 Lemons
3/4 C. Sugar
1 Good quality pre baked baked Pie Crust

Directions:
Directions:
Whisk eggs sugar and zest. In a pan bring juice to a boil and then SLOWLY pour juice into egg mix WHILE CONTINUOUSLY WHISKING. Place mix in a pan add butter and keep whisking and DON'T LET MIX STICK TO PAN.When thickening pour into a pie shell and put in oven at 300 and cook till done...this should not take long..10 minutes or so remove let it reach room temperature and then refrigerate. Decorate with a dusting of confectioners sugar.
