Lemon Surprise Recipe

1 1/2 cups flour
3/4 cup chopped pecans
3/4 cup melted butter
8 oz. cream cheese
1/2 tsp lemon extract
1 cup powdered sugar
1 pkg. Cool Whip
2 small pkgs. instant lemon pudding
3 cup milk
1 1/2 tsp. vanilla

Layer 1- Mix flour, pecans and melted butter. Pat in the bottom of a 9 X 13 in. buttered pan. Bake 10 minutes at 350.

Layer 2-Mix cream cheese, lemon extract and powdered sugar together. Add 1 cup of Cool Whip. Spread on cooled layer 1.

Layer 3- Beat instant pudding, milk and vanilla until firm. Spread over 2nd layer. Then spread remaining Cool Whip on top. Sprinkle with nuts, if desired. Refrigerate.
