1 lb. ground pork
1 lb. ground beef
1/2 loaf Italian bread
2 Tbsp. parsley (fresh is best) chopped
4 cloves fresh garlic chopped fine
1 tsp. fresh ground black pepper
2 tsp. salt
2 eggs (1 egg per pound of meat) beaten
3 Tbsp. olive oil

Wash hands thoroughly.
Machine chop Italian bread to a coarse consistency. Put in a mixing bowl.
Moisten bread with enough cold water, but not soggy.
Add salt, pepper, garlic, parsley. Mix with hands.
Add meat and eggs into bread mixture. Mix well with hands to a loose-medium consistency.
Roll into meatballs of consistent sizes to ensure even cooking.
Fry in a large skillet with olive oil until golden brown, turning to fry evenly.
Place on paper towels to cool.

Alternative cooking option: Bake meatballs in 350º oven until golden brown.
