1 c. shortening
1 c. brown sugar
1 c. sugar
2 eggs, beaten
2 c. flour
1 t. baking soda
1 t. baking powder
¼ t. salt
1 t. vanilla
1 c. coconut
½ c. chopped pecans
3 c. quick-cooking oats

Directions:
Directions:
Cream together shortening, brown sugar and sugar. Beat in eggs. Stir in flour, baking soda, baking powder, and salt. Add vanilla, coconut, nuts and oats. Roll into 1¼" balls and place on greased cookie sheet. Flatten balls until about ⅛" thick, evening up ragged edges.

Bake at 375º for 8 - 10 minutes. (Do not overbake.) Remove from cookie sheet immediately onto rack to cool.
