1 cup (2 sticks) butter, softened 3/4 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla
1/2 tsp peppermint extract 2-1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
10 oz bag peppermint crunch baking chips

Directions:

Preheat oven to 350°.  Prepare a baking sheet with parchment paper or cooking spray.
Beat butter and sugars in large bowl with mixer until light and fluffy.
Blend in eggs, vanilla and peppermint extract.  Add flour, baking soda and salt, mix well.  Stir in peppermint crunch baking chips. 
Drop rounded tablespoonfuls of dough, 1-1/2 inches apart, onto baking sheets.
Bake 9-11 minutes or until lightly browned.  Cool on baking sheets for 3 minutes then remove to wire racks.  
Cool completely.

David’s favorite cookies. I bake these every year for Christmas. .

I use gluten free flour for a gluten free cookie. Use Gluten free flour cup to cup with regular flour.
