2 1/2 cups all purpose flour
1/2 cup whole wheat flour
1 1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1/2 tsp salt
1 cup butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 cup canned pumpkin
1 1/2 tsp vanilla
1 12oz package white chocolate chips

Pre heat oven to 350F.
Line two baking sheets with parchment paper. Set aside.
In a medium bowl, combine the flours, baking soda, pumpkin pie spice and salt.
In a large bowl beat butter on medium to high speed for 30 seconds.
Gradually add the granulated sugar and the brown sugar. Beat until combined. Scrape down the bowl.
Add eggs, one at a time. Beat well after each egg.
Beat in the pumpkin and vanilla until combined.
Add the flour mixture in several batches.
Add the white chocolate chips.
Drop dough in 2 Tbsp mounds, 2 inches apart on the prepared baking sheets.
Bake 10 to 12 minutes, until edges are light brown.
Cool on the baking sheet for two minutes.
Transfer to a wire rack.
