- 1 cup kidney beans
- 2 cloves garlic (minced)
- 1 onion (chopped)
- 1.5 cups parboiled rice
- 1/4 package of creamed coconut (chopped)
- 1/2 tsp thyme
- salt and pepper to taste

Directions:
Directions:
1. Soak beans overnight in 3 cups of water
2. Drain water
3. Put beans in pot with 3 cups of water along with garlic and onion
4. Bring to boil, reduce heat to low, cover and cook until beans are soft (approx. 1- 1.5 hours)
5. Add cream coconut, thyme, salt & pepper.
6. When coconut is dissolved
7. Drain water into bowl and then measure approx. 3 cups of water (Add water is needed to make 3 cups of liquid).
8. Return liquid and beans to pot
9. Bring back to boil and stir in rice.
10. Reduce heat, cover and simmer for approx. 40 minutes.
11. Fluff with fork
