1 1/2 cups shortening
2 cups white sugar
2 eggs
1/2 cup dark molasses (do not use blackstrap molasses)
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. ground ginger
4 tsp. baking soda
4 cups flour

Directions:
Directions:
Preheat oven to 350º Grease baking sheets.

Cream shortening, sugar and eggs. Add molasses.

Sift together flour, salt, cinnamon, ginger and baking soda. Add to creamed mixture. Chill at least one hour.

Remove chilled dough from refrigerator and form into balls the size of small walnuts. Roll balls in white sugar.

Arrange cookie dough on greased cookie sheets. Bake at 350º for 10 minutes. Let sit 5 minutes. Remove to a wire rack to cool.
