3 cups water
1 cup cracked wheat mixed with cracked oats (stone ground)
1/4 cup molasses
< 1/4 cup cooking oil
2 tablespoons salt
1 package yeast (mixed in 1/2 cup warm water and 1 tablespoon sugar)
7-8 cups flour

Directions:
Directions:
Mix 3 cups water and grains. Let sit 7 minutes.
Add molasses, oil, and salt.
Add 2-3 cups of the flour.
Beat dough until dough falls off in globs.
Add yeast mixture.
Beat with a spoon adding flour slowly by 1/2 cupfuls until you can't stir with a spoon any longer.
Knead dough by hand until no longer sticky (10-12 minutes until elasticity).
Add a small amount of shortening. Knead in.

Cover and let rise 45 minutes to 1 hour.
Punch dough down. Leave 15 to 20 minutes.
Turn dough into bread pans (makes 3 large loaves)
Let rise 45 minutes to 1 hour.

Set oven to 375º
Bake bread at 375º for 25 to30 minutes.
Turn oven down to 350º and bake bread for 12 to 15 minutes longer until bread pulls away from sides of pan when shook.
