1 cup warm water
2 teaspoon active dry yeast
1 tablespoon sugar
1 teaspoon salt
2 cups unbleached all-purpose flour
1 tablespoon olive oil
vegetable oil for frying
powdered sugar

Directions:
Directions:
In oversize bowl place flour, salt, yeast add warm water then hand mix no punching until very loose dough ( firm liquid not forming a ball dough). Cover and let rise about 2 hours until at least double in size.
Then prepare deep frying in saucepan or deep fryer and drop dough into the hot oil. Use a tablespoon coated in oil to measure size of Zeppole. Fry until golden brown. Make sure cook through. Remove from oil onto paper towel and then sprinkle with powder sugar or regular sugar.
**Special Napoli Zeppole with Anchovies. You may add anchovies to middle before fry. These are savoury and do not require sugar.
